Beside Xbalanque Resort’s infinity pool in West Bay, Roatan, Lotus serves seasonal menus built around fresh local seafood, fruit and produce. Much of the produce comes from the resort’s Brasil Hill farm, which also grows and roasts its coffee. Special meals include beach barbecues, lobster bakes, sushi and dinners beside a beach bonfire. Desserts change daily, with vegetarian and gluten-free meals prepared on request.
