The Cove is a beachfront restaurant and bar inside the gated Palmetto Bay resort on Roatan’s north shore, serving seafood, imported wine, and desserts. It sits at the foot of the beachside pool, with the dining room and bar opening onto the water.

Every table looks out over the cove, and the room draws locals and expats as much as resort guests. Owner Stephanie Hickey and her staff keep service unhurried and attentive, and that holds up through the busy holiday season when a lot of places stop managing it.

Save room for the deep-fried ice cream or the key lime pie, and finish with a fresh espresso. Reservations are recommended. Parking is easy, and a covered breezeway leads from the lot down to the beachfront dining area.
