Modern Honduran cooking is the focus at From the Roots, set above First Bight within Spirit Origin’s working coffee roastery. The menu uses Honduran ingredients in shared plates, signature mains, snapper fish and chips, plus desserts paired with coffee roasted on site. Panoramic ocean views frame sunset dinners, while Sunday’s $45 chef’s brunch includes a main dish, dessert, Spirit Origin coffee and one drink.
